Begin skinning as far back as the end of the ribs. (Hind flank)
Come along the back bone, punch out around the ribs. Either sleeve skin the front legs down to the knee joint or split the skin at the rear of the leg. Come forward up the neck, disjoint the neck as close to the head as you can.
We can take care of the rest for you.
DO NOT salt the skin and try and freeze it.
